Our extra virgin olive oil is the result of generations of knowledge, tradition, and respect for nature. Each olive is handpicked in the sun-drenched groves of Rogoznica, carefully pressed to preserve its purest essence. Rich in antioxidants, healthy fats, and natural nutrients, our oil not only enriches your meals but also supports a healthy lifestyle. Our story
Long before modern times changed the face of Dalmatia, life here was simple, honest, and deeply connected to the land. Our family’s story began with my great-grandfather, a man whose hands were worn by time and toil, yet always gentle when touching the earth. Alongside my great-grandmother, he planted the first olive trees on a rocky patch of land near Rogoznica — land that many thought could never bear anything.
Every year, as autumn’s cool breath swept over the hills, the family would gather: The harvest was a sacred ritual. There were no machines, only ladders fashioned from old wood, rough baskets slung over shoulders, and songs that echoed across the olive groves. The work was slow, patient — every olive picked by hand, with care and pride. In the evenings, tired but smiling, the family would sit around the old stone table, sharing bread, wine, and stories while the press — a heavy, creaking thing of wood and iron — patiently drew the liquid gold from the fruits of their labor.
For our family, olive oil was never just food. It was a gift. It healed, nourished, celebrated life. A spoonful in the morning, a drizzle on every meal, a remedy for a child’s sore throat, a blessing at weddings, a comfort at farewells.
Today, as I walk among those same trees planted generations ago, I hear the whispers of my ancestors in the wind. Though times have changed — and though we now have gentler presses and stainless steel barrels — the heart of our craft has not. We still pick by hand. We still wait for the olives to tell us when they are ready, not the calendar.
Every drop of our olive oil carries the memory of those who came before us — of sunburned hands, worn sandals, and hearts full of respect for the earth.

Process
Our olive groves, located in the sunny Rogoznica region, are cared for with complete respect for nature.
We proudly cultivate without the use of pesticides or chemical treatments, believing that true quality comes from healthy soil, clean air, and traditional care. Throughout the year, the trees are carefully maintained. After the winter rest, we prune the olive trees to ensure proper airflow and sunlight penetration — a crucial step for strong, healthy growth. Proper pruning also helps to prevent disease naturally, without the need for synthetic products.
During spring and early summer, we regularly mow the grass between the trees. This helps retain soil moisture, protects the trees from pests, and keeps the ecosystem of the grove balanced.
Fertilization is done sparingly and only with organic nutrients, primarily natural compost, ensuring that the trees receive everything they need without harming the environment.
Harvest
As autumn matures and the olives reach their peak ripeness, the harvest begins.
We handpick every olive — no mechanical shaking, no bruising. Hand-picking preserves the integrity of each fruit and ensures that only the finest olives are selected for pressing.
Harvesting is a moment of connection: families and friends gather under the warm Dalmatian sun, continuing a ritual that has lasted for centuries.
Cold Pressing
Immediately after picking, the olives are transported to a certified local olive mill. There, the olives are cold-pressed — meaning the extraction process never exceeds 27°C.
Cold pressing is essential: it preserves the natural aroma, flavor, antioxidants, and healthful properties of the oil.
The freshly pressed oil is never filtered through chemicals. Instead, it is left to naturally decant — the old-fashioned way — allowing tiny natural sediments to settle over time, without disturbing the purity.
Storage
Once decanted, the oil is carefully stored in stainless steel (inox) tanks, specially designed for olive oil preservation.
These tanks are kept in dark, cool rooms, away from light, heat, and air — the three biggest enemies of fresh olive oil.
Stainless steel tanks prevent oxidation and help maintain the oil’s vibrant flavor and nutritional richness for months to come.
We bottle the oil only upon request, ensuring maximum freshness for every customer.
